As Super Bowl Sunday approaches, many of us are eagerly expecting to do three things: 1) watch some expensive TV commercials, 2) ingest copious amounts of “comfort” food and 3) watch Tom Brady win another Super Bowl.
While LMBF can’t (yet) afford a 30-second Super Bowl commercial or predict the game’s outcome, we can definitely help you in the comfort food department. “How” you ask? With an original Super Bowl Chili recipe!
To make this year’s Super Bowl Sunday extra special, our very own team members have crafted an original Lebanese-inspired twist on the classic Mexican “Chili con carne” recipe that will keep you coming back for seconds. Enter the #ChiliConKafta.
OK ready “habibi”? “Yalla!” here’s the recipe…
Ingredients for 8 servings:
- 3 tablespoons of olive oil
- 1½ pounds of Lebanese-style beef “Kafta“
- 1 large onion, chopped (white or yellow)
- 4 garlic cloves (2 whole, 2 finely grated)
- ⅓ cup chili powder
- 1 tablespoon crushed dried oregano
- ¼ teaspoon ground cinnamon
- 1 28-ounce can of diced tomatoes
- 2 cups low-sodium beef broth
- 1 cup of tomato purée
- 1 15-ounce can of rinsed red kidney beans
- Sea salt, freshly ground pepper
- For garnish: grated “Halloumi” cheese, diced avocado, chopped parsley, “Laban” yogurt and baked pita chips (your choice of flavour)
Prep & Cooking (1hr. 15 mins)
- Put 2 tablespoons of olive oil in a large pot over high heat.
- Add Kafta meat, stirring occasionally and breaking up with spoon. Cook for about 4 minutes until lightly browned.
- Reduce heat to medium-high, add 1 tablespoon of oil to pot, then add onion and minced garlic and season with salt and pepper.
- Cook meat, onions and minced garlic for about 5 minutes, stirring often, until onion is soft. Scrape up and mix any browned bits on bottom of pot (this will give it flavour).
- Add chili powder and oregano and cook for another minute, stir until fragrant.
- Stir in diced tomatoes, 2 whole garlic cloves, beef broth and tomato purée and bring to a boil.
- Reduce heat to medium-low and continue to cook, stirring occasionally, until liquid is reduced slightly and beginning to thicken, 40 minutes.
- Stir in kidney beans, cover and cook 10 minutes longer.
- Remove from heat and let it cool off for 5-10 minutes.
- Serve in bowls topped with garnishes and “Sahten!” (Enjoy!)
